Make My EASY & Delicious Pumpkin Spicy Scones: A Step-by-Step Guide

These scones are called "Pumpkin Spicy" for a reason! With extra clove and cinnamon added, they are full of flavor and absolutely delicious. I’ve created this recipe to be easy, so it doesn’t require cold butter like traditional scones— I know, BLASPHEMY! I also just toss everything into my mixer—no need for separate bowls for wet and dry ingredients. I’m breaking all the rules with this one! The result is an almost coffee-cake-like treat that I’m totally into, and I hope you are too. Enjoy!


*If you'd like to add sourdough discard that is an option. Just add a bit of additional flour to adjust for consistency. I recommend only adding about 1/4 cup discard so it doesn't alter the taste too much.




Ingredients:

  • 2 1/2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon pumpkin pie spice

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ground cloves

  • 4 tablespoons unsalted butter, room temperature

  • 3/4 cup sugar (+ bit extra for sprinkling on top)

  • 1/2 cup canned pumpkin puree

  • 1 large egg (+ 1 egg for an egg wash)

  • 1 teaspoon vanilla extract


Pumpkin Spice Glaze

  • 1 cup powdered sugar

  • 1 tsp pumpkin spice

  • 2-3 tablespoons milk


Step 1: Preparing the Dough

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.

  • In the bowl of a stand mixer or by hand, whisk together the butter and sugar until light and fluffy.

  • Add the pumpkin puree, egg, and vanilla extract and whisk again.

  • Pour in the flour, baking powder, salt, and all the spices, trying your best to sprinkle them evenly around the bowl since we skipped a pre-mix of the dry ingredients.

  • Mix until just combined. The dough should be slightly sticky but manageable.


Step 2: Shaping the Scones

  • Transfer the dough onto a floured surface and knead gently a few times.

  • Shape the dough into a circle and pat it down to about 1-inch thickness.

  • Cut the dough into 6 wedges and place them on the prepared baking sheet.


Step 3: Baking

  • Brush the scones with a bit of egg and sprinkle some sugar on top for extra sweetness.

  • Bake for 20-25 minutes or until golden brown.

  • Let them cool slightly while you make the glaze.


Step 4: Glaze

  • Mix the powdered sugar and pumpkin spice together with a fork.

  • Add the milk. The more milk you use, the easier it will be to drizzle on.

  • Pour or spoon the glaze onto your scones.
